Simple Italian Chickpeas

This wonderful recipe was inspired by ATX local Rip Esselstyn. I think he just threw it together which is amazing as the flavors, although simple, are DELICIOUS. It is a super easy, one pan, mid-week recipe. We add a lot of cayenne and LOVE IT.
1 Can Chickpeas (drained)
1 Chopped onion
1 C mushrooms
3 C of baby spinach
2-3 cloves of garlic
2 T Tomato paste
1 C veggie broth (or more, if needed)
Cayenne Pepper and salt to taste
In a heavy saucepan over medium heat, add the chopped onion with a little veggie broth and cook (stirring) until tender - about 4-5 minutes. Add the garlic, cayenne pepper, and tomato paste. Cook, stirring, until fragrant and the tomato paste turns a darker color. Add the mushrooms, chickpeas and veggie broth - bring to a simmer and cover until mushrooms are cooked. Add the spinach, cover and serve with your choice of grain.
