Kale Salad with Maple-Dijon Dressing

This is one of my favorite dressings and it is oil free! So easy and quick to make too!

INGREDIENTS

Dressing:

  • Zest and juice of 2 lemons

  • One 15 ounce can cannellini beans rinsed

  • 1/4 cup tahini

  • 1/4 cup stone-ground mustard

  • 3 tablespoons Braggs Amino Acids or wheat-free tamari or low-sodium soy sauce

  • 2 tablespoons 100% pure maple syrup

  • 1/4 cup nutritional yeast flakes

  • 1/2 cup water

Salad:

6 C Kale

1 C shredded red cabbage

1 C shredded carrots

1 C finely chopped brovvoli florets

One 15 ounce can chickpeas (drained and rinsed)

INSTRUCTIONS 

  • Add dressing ingredients to vitamix…. start on variable speed # 1, turn the machine on and slowly increase to speed 10, then flip to High. Blend for 30 to 45 seconds or until desired consistency is reached.

  • Combine salad ingredients and toss with dressing.

    Dressing can be served with any salad, vegetables, baked potatoes, steamed veggies, etc.
